Official Harem Of Power Banana Bread

Banana Bread, it's yum! And an excellent use of those banana's you SWEAR you will eat before they go bad. Instead of throwing them away, stick over-ripe bananas in the freezer until you have accumulated 2 or 3 (or some multiple thereof) and then make Banana Bread!

Time: 15mins to mix up, 1hr to bake
Cheapness: bananas and basic baking ingredients.
Difficulty: not too bad.
Meal: breakfast and/or snack.
Servings: 1 loaf of bread


Ingredients
1 3/4c flour
2/3c sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

1 c mashed ripe banana (~2-3 bananas)
1/3c butter/margarine (aka 5 1/3 Tbs for those who like to just cut it off the stick)
2 Tbs milk
2 eggs

Step 1: Thaw bananas if frozen.

Step 2: Set oven to 350F.

Step 3: If you are using a regular pan, grease and flour the pan so the loaf doesn't stick. I'm not sure how necessary that is for a non-stick pan. To grease and flour the pan, smear crisco/butter/misc shortening product all over the interior of the pan. Wash your hands. Then, sprinkle a small amount of flour into the pan and shake it around till the flour is stuck to all the grease. It's ok if you've missed some small bits, but if you missed anything big, go back and grease that spot and sprinkle more flour on it. Shake excess flour out of the pan.

Step 4: Mix dry ingredients in a large bowl. OPTIONAL: I've never tried it, but I have it on good authority that adding a little cinnamon or nutmeg is also delicious.

Step 5: Mix wet ingredients in a separate bowl. Use a hand mixer to get everything mixed up. I usually melt the butter a little and then just plop the thawed bananas into the bowl with them, and use the hand mixer to 'mash' the bananas. But if you really want to, you can go ahead and mash them before. If you are using fresh bananas, you should mash them with a fork or something before mixing them with everything else.

Step 6: Add wet ingredients to the dry. Use a rubber spatula to get all the wet stuff out of the bowl. Use spatula to mix OR carefully use hand mixer to mix up the batter (try not to send all the dry ingredients flying).

Step 7: Using your handy rubber spatula, transfer the batter to the greased-and-floured loaf pan Use the spatula to smooth out the dough a little.

Step 8: Pop the loaf pan in the heated oven. SET TIMER. It should bake at 350F for 55-60 minutes.

Step 9: Test the loaf in the center with a knife or other poke-y object. If it comes out clean, it's done. Take the loaf out of the oven and let it cool for ~10 mins or so.

Step 10: Turn the pan upside down, holding it close to the counter/cooling rack/whatever. Shake gently. It should just plop out. If it doesn't want to come out, use a knife and run it gently around the edges of the loaf and try again.

EAT YUM!!

Tasty ways to enjoy your banana bread:
- fresh out of the oven
- fresh out of the oven with some butter
- toasted
- toasted with Lots of Butter
- toasted with cream cheese (zap however much cream cheese you are going to use in the microwave for a couple seconds first, so soften it, otherwise it is pretty much impossible to spread and will break up your banana bread)
