We used to make something like this when I was growing up. I think my mother called them "melted cheesers". It was our standard accompaniment to soup.

We toasted one side of the bread under the broiler, flipped the slices over, and spread butter on the untoasted side before topping with the cheese.

I haven't had these in years!
