Pizza Dough

Time: 30mins, max
Cheapness: pretty cheap.
Difficulty: if you can squish things with your hands, you're set
Meal: dinner, leftovers if you don't eat the whole thing
Servings: ~ 4 medium-size pizza crusts.
Ingredients: basic grocery level yeast
Pizza Dough
1 c. warm water (105F - 115F, you don't want it too hot or you'll kill the yeast)
2.5 - 3 c. flour
1 Tablespoon (or one packet) dried active yeast
1 teaspoon sugar (honey can be substituted, if you like)
0.5 - 1 teaspoon of salt.
Step 1: Warm water in microwave for several seconds. If you have a handy-dandy thermometer, you can use it to check the temp. If not, don't worry. Test the temp with your finger. If it's HOT instead of WARM, let it cool for a couple seconds.
Step 2: Add yeast, sugar, and salt to the warm water. Let it stand for 2-3 minutes and then mix. Try and dissolve most of the yeast globs.
Step 3: Mix flour and liquid. I usually start out with a rubber spatula and 2 C. flour, and add more flour and switch to using my hands as it gets harder to mix. The dough should be a little warm and not sticky. If you want, you can let it rise for a little bit it is not necessary. I find that if you let it go more than an hour, it tastes really yeast-y, FYI.
Step 4: Using your hands, divide the dough into 4 balls. Put any dough you are not going to be used into plastic bags and freeze. On a clean dry surface, sprinkle a little flour and flatten out the crusts. I like using a rolling pin, but you can also just use your hands.
Step 5: Put the newly formed crust onto a baking sheet. DO THIS BEFORE YOU ADD TOPPINGS. It makes your life MUCH easier. Add toppings. I like basil or pesto, artichoke hearts, and sundried tomatoes covered with a little mozzarella, but experiment. Try things out. Feel free to not use tomato sauce. The best part of this is you can make the pizza you've always wanted.
Step 6: Put the oven on 400F. (Wolfgang Puck says 500F, so if 400 ain't doing it for you, crank it up) Bake for 10-15 minutes, until cheese is appropriately melty or browned or crust is browned. Whatever you want. Take it out and cut into manageable pieces (this doubles as a cooling off period, so do it anyway, even if you just want to pick up the whole thing and shove it in your face). EAT.
